What are we looking for? Chef de Partie – Fish and meat
Talent by winsedswiss is looking for Relais & Châteaux Le Bistrot Français - Chef de Partie -. Person with experience in the hospitality industry, fine dining, and Michelin star restaurant experience.
What you will be responsible for:
· Prepare menus in collaboration with the chef;
· High skills in preparation of meat, seafood and fish dishes;
· Good knowledge about preparation of stocks and sauces (such as: coulis, marinades, court-bouillon, fish velouté, etc.);
· High skills of various cooking methods, cooking times, cutting, boning, portioning, slicing;
· You are responsible for supervising and supply the hot cooking station;
· You ensure the cooking of dishes in accordance with HACCP hygiene standards and rules;
Your experience and skills include:
· Culinary diploma;
· Minimum 3 years' experience in similar positions;
· Experience in French and Mediterranean fine dining cuisine (luxury hotels or restaurant);
· Michelin star restaurant experience is a plus;
· Team player, comfortable in the kitchen but responsible, able to work under pressure;
· Positive attitude, open to listen and learn;
· Sociable, patient, adaptable, friendly person;
